A VERY Costco fueled menu

Mr. R and I made a much needed trip to Costco yesterday.
Every two months we make a big food trip to Costco spending about $200. Our haul yesterday contained: pomegranate seeds, blackberries, blueberries, salmon, one rotisserie chicken, blue cheese, a box of spring mix, grapes, crab legs, 3 pounds of organic ground beef, 12 muffins, 6 demi baguettes, two containers of spinach ravioli, crab dip, one jar of mango salsa, shrimp salad, milk, dog bones, diapers, avocados, and jarred red sauce.

This weeks menu will feature almost ALL of our edible Costco items and as usual I am trying to
include two vegetarian/fish meals.

Sunday: Pomegranate Chicken Salad
(featuring the pomegranate seeds, blackberries, and rotisserie chicken)
Monday: Salmon with baked potatoes and roasted broccoli
Tuesday: Spinach ravioli with green salad
Wednesday: Mango chicken salad
(featuring the mango salsa and the rotisserie chicken)
Thursday: Meatball subs (made with the organic beef and red sauce)
and sweet potato fries
Friday: Chicken Potstickers with Thai noodles and Asian Salad

  1. I love Costco! It looks like you got some fabulous stuff and love the menu for the week. Coming back from out of town...I am behind on my weekly menu planning so I have to do it today!
