Breakfast for my HARDWORKING man...

A few days ago, Nina, of According to Nina, tweeted that one of her highlights is making lunch for her HARDWORKING husband. When I read this, I actually laughed out loud. I have no problem with cooking and I really do enjoy meals shared with my husband, but cooking the acutal highlight of my day?
I think not.
Today starts my Spring Break and I have a hot date with carpet cleaners, the paint guy, and our laundry room a.k.a. garage. (In Florida you don't have basements so you are forced to put the washer and dryer in the garage.)
But before all the hoopla of spring cleaning I decided I needed breakfast. And following Nina's example I offered some to my HARDWORKING husband. Who does not start his spring break until tomorrow.

BLT EGGS
I first discovered this amazing combination when I was presenting at a conference in California. We spoke at an early morning session and there was no time for breakfast beforehand. Afterward, the guy I shared the spotlight with, Hi Ben!, offered to take me to a diner for the "BEST EGGS OF MY LIFE". Los Angeles is all about over hype so I was skeptical, but turns out he was right. (FYI: He just got his phD in neuroscience, so he really is a pretty smart guy).
Ingredients: 4 eggs, 1 cup of spinach, 3 strips of bacon, 1/4 cup of Monterey jack cheese, two plum tomatoes, & half an avocado. (Apparently it is VERY UNCOOL to NOT eat an avocado on your BLT in California. Being the standard of cool that I am, I always include my little green omega friendly guy).
I used to eat these eggs with a mimosa on sunny summer Sundays. But seeing as the carpet cleaners will be her in moments... I shoveled mine down with a glass of water and prenatal vitamin.
Oh my, how times have changed!

  1. I notice on days I don't work I often make breakfast and lunch for Matt if he's working for home. Usually it's something simple, but I do like "providing" for my hardworking man too.
